Flour Arrangements: Gluten-Free Angel Food Cake (cupcakes)

Below is the link to some gluten-free angel food cupcakes. At first, I wasn't sure what I thought of them. As I am now halfway through the first cupcake, I am liking it more and more! If you can have strawberries, it would be a great base for some sort of low-fat, healthy dessert. Just as a note, I substituted 1/2 cup agave nectar for the sugar. And it doesn't seem to have impacted the texture or consistency of the cupcake. They baked up just fine. The link below talks about icing for these...I might attempt that at some point but overall, now that I have finished the first cupcake (see it didn't take me long!), I can say I WILL make these again!! I'm pretty sure my kids will like them too which is awesome too!


I wrote previously about the Snickerdoodles. I had said I thought I could make myself like them...I'm beginning to think I won't. Every time I think about them and their strange cold taste, I think 'No way am I making those again.' But I can now start an actual list of gluten/yeast/sugar-free desserts I've found that I like and will make on a regular basis. It's short still, but I'll get there some day!
